Vietnamese Chicken Pho Recipe

Ingredients:

  • 1 whole chicken (or parts of chickens like legs, drumsticks or breast) it is best to have the parts of the chicken with bones to make the broth tastier
  • 1 box or 2 cans of chicken broth
  • rice noodle (as much as you like)
  • 1onion
  • 1-2 inch piece of ginger
  • 2 tablespoons to 1/4 cup of fish sauce to taste
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 4 green onions sliced

Directions:

Cook the chicken in a pot of water, then slowly add the chicken broth to the pot after 15-20 minutes together with salt. Then add a whole onion (peeled and chopped in half) and ginger and simmer for 15 minutes.  Before serving and add fish sauce and/or maybe a little bit of sugar to your own taste.

Soak the dry rice noodle or cook it straight in hot water, until softened. But it is best to soak the noodle for a few hours, then strain before eating.  Put a portion of soup in a bowl & microwave for 1 minute, the noodle will be nice and a bit chewy.

Chop the green onions for garnish.

Shred the cooked chicken that you removed from the pot earlier to the size you like.

Add noodles and chicken to your bowl then pour the soup over the noodles and chicken. Garnish with chopped green onion and a dash of black pepper.
